Succulent blackberries are baked into golden cornmeal cupcakes.

Recipe Ingredients for Blackberry-Cornmeal Cupcakes

1 1/4 cups flour
1/2 cup cornmeal
2 tsp baking powder
1 tsp salt
1 1/4 cups sugar
1/2 cup 1% milk
2 eggs
7 tbsp butter
12 oz blackberries
1 tbsp lemon juice

Recipe Directions for Blackberry-Cornmeal Cupcakes

Preheat oven to 375 degrees. Whisk together flour, cornmeal, baking powder, salt and 1 cup plus 2 Tbsp sugar. In other bowl whisk buttermilk, eggs and melted butter. Pour over flour mixture, whisking to combine. Fill each lined cup with 1/4 cup batter, top batter with 3-4 blackberries then sprinkle with remaining 2 Tbsp sugar. Bake, rotating tins halfway through until brown on top, 20 - 25 minutes. Cool on wire rack. WIll keep up to 2 days in sealed container.
