Hardy high protein vegetable stew like soup.

Recipe Ingredients for Black Soybean, Chickpea and Mushroom stew

1 tablespoon Olive oil
1 cup Onion, chopped
3 cloves Garlic
2 cups Black Soy Beans rready to cook
2 cups Chickpeas, ready to cook
2 cups Mushrooms, sliced
1 cup Carrots, sliced
4 cups Beef broth
1 cup corn, frozen

Recipe Directions for Black Soybean, Chickpea and Mushroom stew

  1. Briefly heat heavy dutch oven, when just hot add oil.

  2. Turn heat to medium high and saute chopped onions for 2 min.

  3. Add carrots, continue to saute for 2 min.

  4. Add garlic and spices of choice, stir in.

  5. Add sliced mushrooms, continue sauteing until mushrooms are cooked through and fragrant.

  6. Add beef broth, beans.

  7. Bring to a boil, turn down heat to medium low and simmer for 2 hours or until ready.
