Recipe Ingredients for Black Rice and Red Lentil Salad

1/2 cup Wild Rice
1 1/4 cups water
1/2 teaspoon salt
1/2 cup Edamame
1/2 cup red lentils
1/4 cup walnuts, broken
1 tablespoon seasoned rice vinegar
2 tablespoons fresh lime juice
1 tsp grated ginger
1 tsp soy sauce
1 tsp sesame oil
1 tablespoon grapeseed oil
2 tablespoons chopped cilantro

Recipe Directions for Black Rice and Red Lentil Salad

  1. Soak lentils for 3 hours.

  2. Combine water and rice, cook for 40-50 minutes until all water is absorbed.

  3. Boil edamame for 5 minutes, drain.

  4. Whisk together rice vinegar, lime juice, cayenne, ginger, soy sauce, sesame oil and grapeseed oil.

  5. Toss solid ingredients together in bowl and add dressing.
