Recipe Ingredients for Black and Red Bean Soup

15 ounce (Light) Red Kidney Beans, drained and rinsed
15 ounce Black Beans, drained and rinsed
1 (small) onion, chopped
1 clove garlic, minced
1/4 cup green bell pepper, chopped
1/4 cup flour
1 teaspoon chili powder
1/2 teaspoon cumin
1 1/2 cups skim milk
2 cups frozen corn
14 ounce (low-sodium) chicken broth
2 tablespoons fresh cilantro, chopped (optional)

Recipe Directions for Black and Red Bean Soup

  1. Coat large saucepan with nonstick cooking spray.

  2. Sauté onions, garlic, and green pepper until tender.

  3. Stir in flour, chili powder and cumin.

  4. Gradually stir in milk.

  5. Stir in beans, corn and broth. Slowly bring to a boil, stirring constantly.

  6. Reduce heat and simmer 15 min., stirring occasionally. Stir in cilantro and serve

  7. Makes 8 (1 cup) servings
