This is barely a stew -- more of a huge mound of exquisitely bold veggies in a peppery sauce. The 1 1/2 t of black pepper is just a starting point -- go for more! And -- since you are going to cook the bacon crisp and drain it on paper towels, the fat content really isn't as high as the nutrition counter would lead you to believe... GREAT SERVED SOUTHERN STYLE WITH A THICK SLAB OF CORNBREAD! Better yet -- ON the thick slab of cornbread.

Recipe Ingredients for Black Peppered Green Bean Stew

16 oz red potatoes
24 ounces green beans
16 ounces canned tomatoes
10 ounces Rotel tomatoes
16 ounces red onion
12 ounces vegetable juice
6 ounces bacon
1 c chicken stock
1 t salt
1 1/2 t black pepper
2 oz balsamic vinegar

Recipe Directions for Black Peppered Green Bean Stew

  1. Wash and cube the potatoes (about a 3/4 inch cube) and chop onion - and put them on to boil in salted water. Once the potatoes are tender (but not falling apart) drain and set the pan off heat.

  2. In a separate pan, or in the microwave wrapped in paper towels, cook your bacon crisp and remove to drain on paper towels.

  3. Add bacon, green beans (frozen or drained canned), canned diced tomatoes and their juice, V-8 vegetable juice, diced Rotel tomatoes and their juice and chicken stock to the potato mixture and stir gently to combine. Add salt and pepper to taste. -- be liberal with the pepper.

  4. Bring to a boil, and turn the heat down to a simmer, and let the flavors blend for about 30-45 minutes.

  5. Serve with a fresh grind of black pepper and a drizzle of good balsamic vinegar.
