A recipe that I came up with to get rid of some left over fresh cherries. Made 8/2-6/10 Flavor is brilliant, but texturally watery. Too much alcohol also caused it not to freeze. Recipe Edit 8/4: Changed recipe to address previous problems.

Recipe Ingredients for Black Forest Brandy Ice Cream


ICE CREAM:
8 oz. whole milk
8 oz. heavy cream
50 g. sugar
30 g. Dutch cocoa

CHERRY SWIRL:
190 g. cherries
25 g. sugar
1/2 oz. brandy
28 g. reduced fat cream cheese

CHOCOLATE SWIRL:
10 g. almonds
30 g. chocolate powder
1 tbsp. milk
5 g. almond extract

Recipe Directions for Black Forest Brandy Ice Cream

  1. In a bowl, combine cherries, 25 g. sugar, and brandy. Allow cherries to macerate for a couple hours. Puree mixture in a food processor when done.

  2. Combine milk, half and half, remaining sugar, cocoa, and vanilla. Heat in a sauce pan, stirring until sugar and cocoa are integrated. Remove from heat, and stir in the pureed cherry mixture, saving about 3/4 of a cup. Sit mixture in the fridge until completely chilled.

  3. Combine chopped dark chocolate and peanuts with remaining puree. Chill this mixture in the fridge also.

  4. Process ice cream in maker. As the mixture nears completion, stir in remaining puree mixture.
