Recipe Ingredients for Black Eyed Peas soup

2 tbsp olive oil
1 medium onion, diced
1 clove garlic, minced
1 carrot, diced
1/2 cup celery, diced
1/2 tsp thyme
1 cup water
1 cup chicken broth
1 cup spinach
2 cups black eyed peas
1 tbsp red wine vinegar
1/2 tsp salt
1/2 tsp pepper

Recipe Directions for Black Eyed Peas soup

  1. Saute onions with olive oil

  2. Add garlic

  3. Add veggies, cook 4 minutes

  4. Add water and broth, boil

  5. Add everything else, simmer for 10 minutes

  6. Use precooked beans!
