Good for lunch. Can shape it by pressing it into a cup for a pretty presentation.

Recipe Ingredients for Black-eyed Peas and Rice

3 c black-eyed peas (cooked)
1 c rice (raw)
1 onion
1 t garam masala
1 clove garlic
1/2 t salt
1/4 t pepper
1/4 c dried cranberries
3 oz sausage (cooked)

Recipe Directions for Black-eyed Peas and Rice

  1. If starting with raw black-eyed peas, soak them overnight changing the water several times. Then boil them in water with salt for about an hour.

  2. Cook the rice separately with 2 1/2 c water - bring to a boil, stir, then cover and simmer for about 20 min. Remove from heat.

  3. In a spearate pan saute the onion, garlic, and garam masala in a small amount of oil.

  4. Soak the cranberries in water to soften. Can nuke them for a minute to speed it up.

  5. Combine everything and heat through. Add salt and pepper to taste.
