tried to find black eyed peas on the list, but it was not there. I subsituted black beans for comparative purposes.

Recipe Ingredients for black eyed peas

1 lb dried black beans
1 medium onion
1 t olive oil
3 cloves garlic
2 jalapeno peppers
1 cup chopped celery
1/3 yellow pepper

Recipe Directions for black eyed peas

  1. soak beans 8 hours and drain

  2. saute veggies in olive oil

  3. add beans and 6 C H20

  4. season with 2 bay leaves

  5. simmer for 1 and 1/2 to 2 hours

  6. season to taste with salt and pepper
