I use a bunch of green from the farmers market, preferably sweet potato leaves.

Recipe Ingredients for Black-eyed peas with greens

16 ounces dry black-eyed peas
15 ounces pork loin, chopped
1 tsp garlic, minced
1 bay leaf
1/2 tsp black pepper
2 tbls tamarind powder
12 cups Swiss chard

Recipe Directions for Black-eyed peas with greens

Soak peas to package directions. Cook chopped pork and garlic. Add other ingredients, bring to boil. cook about an hour or til peas are done. Add green cook 5 minutes. Simmer til ready to serve.
