Recipe Ingredients for Black-Eyed Pea and Tomato Salad with Feta

1 1/2 cup black-eyed peas, cooked
2 green onions, including some of the greens, thinly sliced
1 tomato, seeded and chopped
1 tablespoon parsley, chopped
1 teaspoon marjoram, dried
2 ounces feta cheese, diced
2 tablespoons lemon juice, fresh
1 small onion (shallot), finely diced
4 tablespoons olive oil, extra virgin

Recipe Directions for Black-Eyed Pea and Tomato Salad with Feta

  1. Simmer fresh or frozen peas until tender. Rinse can peas.

  2. Put drained peas in bowl with green onions, tomato, parsley and marjoram. Make vinaigrette with last 3 ingredients, plus salt and pepper. Pour over peas and toss gently. Add the cheese, some pepper and toss again. Taste for salt. Serve chilled or at room temperature.
