Recipe Ingredients for Black Eyed Pea Soup

1 lb. black eyed peas, soaked and drained
1 lb. bacon, chopped
1 t. hot red pepper flakes
5 cloves garlic, minced
2 large white onions, diced
1/2 t. oregano
2 T. Dijon mustard
1 cup celery, chopped
1 cup parsley, chopped
4 cans chicken broth

Recipe Directions for Black Eyed Pea Soup

  1. Wash & inspect beans.

  2. Soak overnight in gallon water (16 cups)

  3. Drain & add fresh gallon of water

  4. ADD:

  5. 1 lb. chopped bacon

  6. 1 t. hot red pepper flakes

  7. 5 cloves minced garlic

  8. 2 HUGE white onions (chopped)

  9. t. oregano

  10. 2 T. Dijon mustard

  11. Handful of chopped celery

  12. ? ? ? parsley

  13. Salt & pepper to taste

  14. Combine with beans and cook 3-4 hours (1/2 time with lid)

  15. NOTE:

  16. Recipe originally made with black beans. Cooking times differ from above?.Cook black beans 4-5 hours by themselves, add rest of ingredients and cook 2 more hours.
