Recipe Ingredients for Black Eyed Pea Salsa

1 cup brown rice
2 cups water
31 oz. black-eyed peas, drain ed and rinsed
10 oz. diced tomatoes
1 oz green chili peppers

Recipe Directions for Black Eyed Pea Salsa

  1. DIRECTIONS

  2. 1. Bring a small pot of rice and water to a boil.

  3. 2. Cover pot, reduce heat to simmer and let cook 20 minutes or until rice is tender.

  4. 3. In a large saucepan, combine rice, peas, tomatoes and chili.

  5. 4. Stir the mixture over a medium heat until it is heated through.
