Simple Black Eyed Pea summer salad.

Recipe Ingredients for Black Eyed Pea Salad

1 cup Black Eyed Peas, Organic
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
0.5 medium (2-1/2" dia) Onions
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 serving Green Onion
2 tbsp Extra Virgin Olive Oil
1 tsp Classic Dijon Mustard
3 wedge yields Lime Juice

Recipe Directions for Black Eyed Pea Salad

  1. grill red pepper and 1/2 onion

  2. drain and rinse black eyed peas and put in bowl

  3. add diced tomatoes, diced red pepper, diced onion, and green onions

  4. mix in 2 tbsp olive oil, 1 tsp dijon mustard, and the juice of 1/2 lime

  5. salt and pepper to taste
