Recipe Ingredients for Black Eyed Pea Salad

15 oz blackeye peas
1 medium bell pepper, chopped (I prefer red, orange or yellow bell peppers as they are sweeter)
1 red onion, chopped
2 jalapeno pepper, seeded and finely minced
1 clove garlic, minced
1 avocado, cubed
4 cups lettuce
2 tablespoons lemon juice
1/4 cup olive oil
3 tablespoons red wine vinegar
1 salt and pepper
1 pinch cayenne pepper
1 dash Tabasco
2 teaspoons sugar

Recipe Directions for Black Eyed Pea Salad

  1. Dice Peppers

  2. Finely Dice Onion

  3. Finely Dice Garlic Glove

  4. Place all diced ingredients into a bowl

  5. Add rinsed blackeye peas

  6. Add diced avocado

  7. In separate small bowl Mix dressing ingredients (lemon through sugar)

  8. Pour over diced mix. Toss Gently.

  9. For each serving, serve on 1 cup of lettuce or sprouts.
