Recipe Ingredients for Black-Eyed Pea Salad

3 tbs lemon juice
1 tbs olive oil
1/2 tsp pepper
1/4 tsp kosher salt
1/4 tsp splenda
1 cup cherry tomatoes
1 cup green onions
1/2 cup chopped parsley
15 4/5 oz Black-Eyed Peas, rinsed and drained
2 garlic cloves
1/2 cup diced zucchini

Recipe Directions for Black-Eyed Pea Salad

  1. To prepare dressing, combine first 5 ingredients in a small bowl, stirring with a whisk until well blended.

  2. To prepare salad, combine tomatoes and remaining ingredients in a large bowl. Drissle dressing over salad; toss well. Cover and chill
