Black-Eyed Pea Salad with creamy low-fat dressing

Recipe Ingredients for Black-Eyed Pea Salad

15 1/2 oz canned black-eyed peas
1 celery stalk
1 tablespoon onion
1 tablespoon canola oil
1 tablespoon reduced-fat mayonnaise
1/4 teaspoon salt
1 medium tomato

Recipe Directions for Black-Eyed Pea Salad

Chop celery and onion. Drain and rinse black-eyed peas. Combine first three ingredients, whisk oil, vinegar, mayonnaise, salt and a dash of cayenne pepper. Stir into vegetable mixture. Refrigerate before serving, stir in tomato just before serving.
