2 cups Blackeye Peas
3 cups butternut squash
4 tbs olive oil
1 clove garlic
3 tbs lime juice
1 cup red onion
1/4 cup green pepper
1/4 cup cucumber
2 plum tomatoes
1/2 tsp salt

Peel squash and cut into 1/2" cubes. Bake at 400 until tender.
