Recipe Ingredients for Black eyed pea fritters

1 1/2 cups dried black-eyed peas
3/4 cup onion
1 1/4 tsp salt
1/8 tsp pepper
1/4 tsp cayenne

Recipe Directions for Black eyed pea fritters

  1. Soak peas over night in water

  2. rub between hands in cool water to remove husks

  3. combine all ingredients in food processor

  4. Blend

  5. Slowly add 5 tbsp hot water

  6. Blend until paste has a dropable consistency

  7. Form into 1-2 inch fritters

  8. Bake at 350 degrees on parchment paper until golden brown

  9. Makes about 40 fritters
