Recipe Ingredients for Black-Eyed Pea fritters

1 cup black-eyed peas
1 large egg
1/2 cup onion, chopped
3/4 tsp salt
1/4 tsp cayenne pepper
1/4 tsp cumin
1 tbl breadcrumbs, fine
1/4 cup vegetable oil

Recipe Directions for Black-Eyed Pea fritters

  1. Using a potato masher, mash peas in a medium-sized bowl until smooth. Stir in egg, onion, and spices.

  2. Heat oil in a skillet. Drop mixture by tsps. into hot oil and pan fry until brown. Place on paper towel to drain any excess oil.

  3. Makes 28 balls/fritters. 1 serving = 4 fritters
