Recipe Ingredients for Black Eyed Pea & Collard Soup

1/2 cup dried black-eyed peas
1 tbsp vegetable oil
2 cups collard greens, packed
1 medium white onion, chopped
3 cups low sodium vegetable broth
2 cups water
1 1/2 cups potatoes, peeled and cubed
1/2 tsp salt
1/4 tsp ground pepper

Recipe Directions for Black Eyed Pea & Collard Soup

  1. Soak the beans in water overnight. Drain.

  2. In a 3-quart saucepan, heat oil over med-hi. Add collards and onions, cook stirring until soft, about 3 min.

  3. Add the broth and water, bring to a boil. Add the beans, cook 1 hour 15 min or until beans are tender.

  4. Add the remaining ingredients, simmer 25 more minutes.
