A delicious southern inspired casserole.

Recipe Ingredients for Black eye pea, sweet potato, collard casserole

1 tbs. olive oil
1 onion, diced
6 cloves garlic, minced
2 tbs. ginger, minced
1 sweet potato, diced
6 cups collard greens, chopped
2 cups black eyed peas, cooked
1 tbs. chipotle pepper, ground
1/2 tsp. cinnamon
1/4 cup tamari
1/4 cup mirin
2 cups brown rice
6 cups water
1 tbs. lemon juice
2 tbs. red wine vinegar

Recipe Directions for Black eye pea, sweet potato, collard casserole

  1. Heat oil in pan over medium heat. Saute onions until translucent, add garlic and ginger, saute for 1 minute.

  2. In a large bowl, combine onion mixture and all other ingredients.

  3. Transfer to large baking dish, cover with foil, bake for 1 1/2 to 2 hours at 350 or until rice is done.
