Recipe Ingredients for Black Chickpea Burgers

2 cup chickpeas, drained and rinsed
2 cup black beans, drained and rinsed
1 carrot, trimmed, peeled and finely grated
1 small onion, peeled and finely grated
1 tbsp pumpkin seed
2 tbsp tahini, drained of any excess oil before measuring
1 garlic clove, peeled and chopped
1 tbsp chopped fresh coriander
1 tbsp bouillon

Recipe Directions for Black Chickpea Burgers

  1. Preheat oven to 220C/425F

  2. Place all the ingredients in a food processor and blend for 5-10 seconds, until the mixture is fairly coarse (you can use a hand-held. blender).

  3. Push the mixture down with a spatula and blend for a further 10 seconds.

  4. I prefer to use a potato masher on just the beans and then mix everything. Gives it more texture.

  5. Remove the blades from the processor, wet your hands under the cold water tap and shape the mixture into 15 small balls.

  6. Line a large baking tray with greaseproof paper. Place the balls on the tray and flatten slightly with the back of the spoon.

  7. Bake for 18-20 minutes until lightly coloured. If needed, flip and cook for 5 more minutes. Remove from the oven and allow to rest.

  8. Additional spices if desired

  9. Shitake mushroom, dried nd pulverized

  10. Cumin seed

  11. white peppercorn
