Recipe Ingredients for Black Chick Pea and Potato Salad

2 cups chickpeas
2 medium potatoes
1 red onion
1/4 cup cilantro
1/2 cup tamarind paste
1/4 cup mint
3 green chili peppers
3 red chili peppers
2 tablespoons ground cumin
1 tablespoon tamarind
1 tablespoon ginger
1 tablespoon salt

Recipe Directions for Black Chick Pea and Potato Salad

  1. Soak chickpeas for at least 4 hours; overnight is preferable. Boil chickpeas (al dente).

  2. Steam potatoes and chop into cubes.

  3. For dressing: Blend together all the ingredients for the dressing with 1/2 cup of water (more if needed).

  4. In a bowl, pour some dressing and add the potatoes, chickpeas, onions and cilantro.

  5. Add more dressing if required and adjust salt.

  6. Garnish with cilantro and mint leaves.
