Delicious cupcakes with extra cream cheese. You can place them in the freezer and grab one out for a snack.

Recipe Ingredients for Black Bottom Cupcakes Extra


Combine in mixing bowl:
16 oz. Neufchatel Cheese (softened)
2 eggs
2/3 cup sugar
1/4 tsp salt

beat well & stir in:
2 cups chocolate chips

Sift into another mixing bowl (I just stir I don't sift):
2 1/4 cups flour
1 1/2 cup sugar
3/8 cup cocoa
1 1/2 tsp baking soda
3/4 tsp salt

Add:
1 1/2 cup water
1/2 cup Canola oil
1 1/2 tbsp vinegar
1 1/2 tsp vanilla

Recipe Directions for Black Bottom Cupcakes Extra

  1. Beat until well combined

  2. Fill muffin cups, lined with paper baking cups, one-third full with chocolate batter. Top each one with heaping teaspoonful cream cheese mixture. Sprinkle with sugar and (Optional) chopped blanched almonds if desired.

  3. Bake @ 350 for 30 to 35 minutes.

  4. Now for my variations. I actually bake them at 325 but that may a fluke with my oven. Important. I have started to make a double batch of the cream cheese mixture using a reg cream cheese and a 1/3 fat free cream cheese. I also make 1 1/2 batch of the chocolate mixture. This gives you more cream cheese part in the chocolate part. I also have finally not overfilled the cups and then I can get them out of the muffin pan easier. And if there is extra cream cheese mixture I bake it alone and someone eats it. Remember also how I use to make them and freeze them and always had a ready treat. And I never have done the almond thing but the original recipe calls for them and I have had them that way before.
