Black beans and sweet potatoes good over rice or as enchilada filling

Recipe Ingredients for Black Beans and Sweet Potatoes

1 sweetpotato, 5" long Sweetpotato
1 1/2 cup Beans, Black, Mature Seeds
1/2 medium raw Onion Red
3 clove Garlic
2 tbsp Olive Oil
3 cup Fire Roasted Diced Tomatoes
4 teaspoon Cumin, Ground
4 tbsp Green Chiles

Recipe Directions for Black Beans and Sweet Potatoes

  1. Sautee onion & garlic in olive oil, add chili powder and cumin,

  2. add diced sweet potato, black beans, and can of tomatoes. Add small amount of water if necessary. simmer until potatoes are tender.

  3. Serve over rice with plain yogurt or sour cream and cilantro as garnish.
