Recipe Ingredients for Black Beans & Sausage from Everyday Food

6 1tsp Olive Oil
32 oz Polska Kielbasa Sausage Link
9 medium raw Carrots
6 tbsp chopped Shallots
6 clove Garlic
9 cup Beans Black
9 tbsp Parsley
6 cup Light

Recipe Directions for Black Beans & Sausage from Everyday Food

  1. Heat oil in a large skillet.

  2. Brown chunked sausage on all sides. Transfer to a plate.

  3. Add chopped carrots and shallots and cook until just barely soft. Season with salt and pepper to taste.

  4. Add minced garlic and cook until fragrant.

  5. Add black beans and broth and bring to a boil.

  6. Add sausage.

  7. Reduce heat to a rapid simmer.

  8. Cook until carrots are tender: about 12 minutes.

  9. Remove from heat and stir in parsley.

  10. Serve with more parsley and a dollop of yogurt.
