A Cuban favorite that's been Americanized. The "sofrito" is only cooked until the vegetables are tender and is not pureed.

Recipe Ingredients for Black Beans and Rice

1 cup Dharamsala Aromatic Indian Rice Blend
16 oz dried black beans
1 onion
1 cup chopped mushrooms
1/2 cup red bell pepper
1/2 cup red bell pepper
1/2 cup red bell pepper
1/2 cup chopped mushrooms
1/2 tsp black pepper
2 tsp garlic
1 tsp cumin
1 tsp coriander
1 tsp corn starch
1 tbsp olive oil

Recipe Directions for Black Beans and Rice

  1. soak black beans is water for several hours, then boil until tender. Drain reserving 1 cup of the bean water and set both aside.

  2. Chop and cook 1/2 onion in 1 1/2 tsp olive oil. Add in the beans when the onions become clear with the cumin, coriander and 1 tsp of the garlic.

  3. Mix the corn starch into the reserved bean water and add to the bean mixture. Mash a few beans to the side of the pan to thicken the mixture. Simmer on low stirring occasionally until the rest of the meal is ready to serve.

  4. Cook rice in separate pot according to package instructions, about 20-30 minutes.

  5. 15 minutes into the rice cooking instructions, use a third saute pan to cook the remaining chopped onion in the remaining olive oil. Add the chopped peppers and chopped mushrooms. Saute on medium until the vegetables are tender.

  6. Layer the rice on the bottom of a plate. Spoon the black beans on top and liberally sprinkle the sauteed vegetables on top of the beans.
