Recipe Ingredients for Black Beans and Rice

1 tsp. olive oil
2 tablespoons onion, chopped fine
1 tablespoon green pepper, chopped
1/4 cup tomatoes
1/4 cup Black Beans
1/8 tsp. garlic salt
1 1/2 tsp. cider vinegar
1/2 cup cooked rice
1/2 tsp. thyme

Recipe Directions for Black Beans and Rice

In large skillet, heat olive oil. Cook onion and green pepper until tender. Stir in tomatoes, beans, thyme and garlic salt. Cook 3 minutes.Add vinegar, sauce and reserved juice. Continue to cook 5 minutes. Serve over rice. Garnish with lime wedge or sliced mango.
