Made this up last night and it was delicious! Top with cheese and sour cream if you have the calories, it's even better.

Recipe Ingredients for Black beans and rice

3 cups black beans (2 15oz cans), drained and rinsed
28 oz can diced tomatoes
3 tsp chicken bouillon
1 large onion, chopped
1/2 tsp olive oil
12 tsp McCormick?s Bold Taco Seasoning (1 packet)
2 cups cooked rice (boiled with bouillon)

Recipe Directions for Black beans and rice

  1. Combine one can of black beans, the juice from the can of tomatoes (reserve actual tomatoes) and 1 tsp of bouillon. Stir, bring to a boil, and simmer for 10-15 min. til beans are mushy. When ready, mash with a fork or blend with immersion blender.

  2. Meanwhile, saute onion in olive oil.

  3. Combine tomatoes, onion, taco seasoning, mashed beans, and other can of black beans. Stir, bring to a boil and simmer for a few minutes.

  4. Mix in 2 cups of cooked rice and serve.
