Spicy vegetarian beans and rice recipie

Recipe Ingredients for Black Beans and Rice

14 ounces canned diced tomatoes
1/2 tablespoon chili powder
1/2 tablespoon cumin
1 tablespoon cilantro
1 large onion, diced
1 green pepper, diced
1 tablespoon olive oil
1/4 cup shredded cheese
4 tablespoons fat-free sour cream
4 tablespoons hot sauce
28 ounces canned black beans
2 cups of cooked brown rice
4 cloves garlic

Recipe Directions for Black Beans and Rice

  1. saute all ingredients together in a large pan or skillet

  2. cook rice seperately

  3. simmer ingredients until cooked throughout

  4. serve bean mixture over mound of rice and top with 1 tblsp sour cream, shredded cheese and hot sauce to taste
