1 T olive oil 3/4 c onion, chopped fine 1/2 cup green pepper, chopped fine 1 cup tomatoes, diced 1 can Bush's Black Beans, drain and rinse 1/2 teasp thyme 1 teas garlic powder 3 T cider vinegar 1/2 teas hot pepper sauce 2 cups cooked rice

1.5 cup Black Beans
0.75 cup, chopped Onions
0.5 cup, chopped Peppers, Sweet, Green
1 tbsp Olive Oil
1 cup cherry tomatoes Tomatoes, Red, Ripe
0.5 Teaspoon Thyme
1 tsp Garlic Powder
3 Tablespoon Cider Vinegar
0.5 serving Texas Pete hot pepper sauce
4 serving Great Value Instant Brown Rice

Recipe Directions for Black Beans and Rice - lowered sodium

  1. Rinsing the beans and using garlic powder in place of garlic salt reduces the salt content of the recipe:

  2. In skillet, heat olive oil and cook onion and green pepper until tender.

  3. Stir in tomatoes, beans, thyme, and garlic powder.

  4. Cook 3 minutes

  5. Add vinegar, pepper sauce and continue to cook for 5 minutes. May need water to keep from sticking.

  6. Serve over rice.

  7. Garnish with lime wedge or sliced mango (Optional)
