Black Beans Recipe

Black Bean Soup to be served with yellow rice.

Recipe Ingredients for Black Beans

1 pound dried black beans
14 oz. diced tomatoes
1 medium onion
1 medium green pepper
2 tbs olive oil
4 cloves garlic, chopped
1 salt and pepper to taste

Recipe Directions for Black Beans

  1. Soak beans overnight in enough water to cover by 2 inches.

  2. Heat 2 TBS olive oil in a saucepan

  3. Saute onions, garlic and pepper in oil

  4. Add black beans and saute briefly -- 1 minute

  5. Add enough water to cover and reduce to simmer

  6. Simmer for 2-4 hours on low heat

  7. When beans are cooked, use masher to mash some of the beans or place 1 cup in a blender. Return blended beans to soup and stir.

  8. Serve with yellow rice.
