Black beans and rice recipe from Bush's can with a few alterations.

Recipe Ingredients for Black Beans

14 oz. black beans
1 tbsp extra virgin olive oil
1/2 green pepper
1/2 onion
1 clove garlic
1 tomato
1/2 tsp thyme
1 tsp tabasco sauce
3 tbsp vinegar

Recipe Directions for Black Beans

  1. Separate beans and liquid. Finely chop onion and pepper. Mince garlic. Dice tomato.

  2. Heat olive oil in skillet.

  3. Add onion, green pepper and garlic. Cook till tender.

  4. Add tomato, thyme and beans. Cook 3 minutes.

  5. Add reserved liquid, vinegar and tabasco. Cook 5 minutes.

  6. Serve with or without rice.

  7. 1 serving = 1/2 cup
