I made these beans as an easy side or to accompany huevos rancheros.

Recipe Ingredients for Black Beans

1/2 lb black beans
4 cups of water
2 tomatoes
1/2 onion
2 stalks celery
1/8 cup of minced garlic
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 oz olive oil

Recipe Directions for Black Beans

  1. Rinse black beans and place into a small crockpot. Cover with 4 cups of water.

  2. Pour 1/2 oz olive oil into a skillet.

  3. Dice tomatoes, onions and celery.

  4. Add onions, celery and garlic to the skillet and brown.

  5. Add the mixture along with the tomatoes and remaining ingredients to the crockpot. Cover and let cook on medium for 6 hours.
