Black beans that can be served as side or with rice. Serving size = 1/2 cup.

Recipe Ingredients for Black Beans with Peppers & Tomatoes

1 tbsp olive oil
1 small onion, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 chopped tomato
3 cloves minced garlic
2 cups black beans, dried
1 tbsp white vinegar
1/4 teaspoon cayenne powder
1 teaspoon dried oregano or 1 heaping Tbsp chopped fresh oregano
1 Salt and pepper to taste
1/2 fruit lime (optional)
1/2 cup chopped cilantro (optional)

Recipe Directions for Black Beans with Peppers & Tomatoes

  1. Soak beans overnight (or use 2 16 oz cans).

  2. Cook beans in water for 1.5 hours over medium heat or until soft. Drain.

  3. Heat oil in a large skillet on medium high. Sauté onions and bell peppers for 3-4 minutes, until just beginning to soften, then add garlic and sauté a minute more. Add the black beans, tomatoes, vinegar and Tabasco or cayenne. Bring to a boil, reduce heat, cover and simmer for 30 minutes.
