Recipe Ingredients for black beans in mango sauce

8 oz black beans
1 quart water
1/4 tsp bay leaves
10 oz mango
1 tbsp lemon juice
1 tbsp orange juice
1 tbsp maple syrup
3 tbsp cilantro
1 tbsp lime juice

Recipe Directions for black beans in mango sauce

  1. Place beans in a large saucepan with enough water to cover. Boil. Remove fro heat and let soak 2 hours. Drain.

  2. Pour in boiling water and add bay leaves. Boil and simmer 1 hour 15 min or until beans are done. Drain.

  3. Mix beans, mango, lemon, OJ, maple syrup, and cilantro. Season. Drizzle with lime juice.

  4. Serve with tortillas.
