Black beans & mango- a sweet way to eat beans. Serve over rice or a bulgar/brown rice mix (not included in recipe)

Recipe Ingredients for Black beans and mango

1 tbsp olive oil
1/4 cup cilantro, chopped
31 ounce black beans
1 mango, peeled, pitted and diced
1/2 small green apple, chopped
1 small onion, chopped
1/4 tsp salt

Recipe Directions for Black beans and mango

  1. Heat olive oil in a saucepan.

  2. Add onions until translucent.

  3. Add mango, apples, beans, cilantro and salt.

  4. Cook until the apples and mango become soft.
