Recipe Ingredients for Black Beans and Couscous Salad

1 cup Couscous, Dry
1 1/2 cups vegetable broth
1 cup Black Beans, Organic
1/2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1/2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
1 can (12 oz) yields Corn, Sweet, Yellow
1 1/2 oz Extra Virgin Olive Oil
1 oz Lemon Juice
1 tbsp Vinegar red wine
1/2 tsp Cumin Seed

Recipe Directions for Black Beans and Couscous Salad

  1. 1. Bring broth to a boil in a 2 quart or larger sauce pan and stir in the couscous. Cover the pot and remove from heat. Let stand for 5 minutes.

  2. 2. In a large bowl, whisk together the olive oil, lime juice, vinegar and cumin. Add vegetables and beans and toss to coat.

  3. 3. Fluff the couscous well, breaking up any chunks. Add to the bowl with the vegetables and mix well. Season with salt and pepper to taste and serve at once or refrigerate until ready to serve.
