Once a week, I find it convenient to soak about 1/2 c. dried beans, then boil until cooked but firm. (makes a bit over 2 cups) I keep them in the fridge to add to salads. Increases fiber intake.

Recipe Ingredients for Black beans and corn with rice

8 ounce Mahatma Saffron Yellow Rice Mix
1 1/4 cups water
1 c. black beans
1 c. frozen corn
2 teaspoons lime juice
1 teaspoon ground cumin

Recipe Directions for Black beans and corn with rice

  1. Cook the yellow rice mix as directed leaving out the fat.

  2. Zap corn in nuker to thaw.

  3. Mix in the other ingredients and serve.
