Recipe Ingredients for Black beans, chicken and rice

155 g chicken breast
2 1/5 cups brown rice
270 g black beans
2 cups frozen corn
1 medium onion
1 cup green pepper, diced
70 g celery
1/4 cup chicken broth
60 g part-skim mozzarella

Recipe Directions for Black beans, chicken and rice

  1. Cook and dice chicken.

  2. Heat chicken with veggies and chicken broth. Once everything is softened add rice.

  3. Heat until everything is hot.

  4. If using green salsa, cook the chicken in it. Then add some cheese (feta or mozzarella) and stir until melted in.
