A healthier take on traditional black beans and rice

Recipe Ingredients for Black Beans and Bulgur

3/4 cup Bulgur, Dry
1 3/4 cup Black Beans Canned
0.33 cup Frozen Cut Corn
0.33 cup Frozen Sweet Peas
1 serving Cayenne Pepper
1 serving Regular Soy Sauce
1/4 tsp Onion Powder
1/4 tsp Garlic Powder

Recipe Directions for Black Beans and Bulgur

  1. In a 4-qt pot add 11/2 c. water, peas, corn, soy sauce, garlic, cayenne and onion powder. Bring to a boil and add bulgur.

  2. Cook for about five minutes before adding the black beans, including the juices from the can.

  3. Simmer on low-medium for at least twenty minutes stirring at least two to three times per five minutes. All of the excess liquid should be absorbed.

  4. Can be served warm or cold, with sour cream and/or salsa added to taste. Servings are about 2/3 c.
