This is a hearty, tasty, budget stretching, one dish meal that can easily be made vegetarian with a substitution of vegetable broth/stock for the chicken broth.

Recipe Ingredients for Black Beans and Barley

1 1/2 cups fat free chicken broth
3/4 cup pearled barley
15 1/2 oz can black beans, drained
2 tomatoes, diced

Recipe Directions for Black Beans and Barley

  1. Bring the broth to a boil.

  2. Reduce the heat to medium and add the barley.

  3. Cook for 10 minutes or until all of the liquid is absorbed.

  4. Add the beans and the tomatoes and simmer for a few minutes until it is all heated through.

  5. (Optional) For extra flavor you can saute onion and garlic before adding the chicken broth and add basil, oregano, and cumin to the broth to taste before adding the barley.
