Recipe Ingredients for Black Bean-Zucchini Tortilla Casserole

1 cup, chopped Onions
1 cup, chopped Peppers, Sweet, Green
3.75 cup Organics Organic Crushed Tomatoes
2 serving Mild Diced Green Chiles
1.875 cup Black Beans, Organic
1 medium Squash, Summer, Zucchini, Includes Skin
12 tortilla medium (approx 6" dia) Tortillas, Ready-to-bake Or -fry, Corn
1.5 cup Shreds
2 tsp Chili Powder
1 tsp Oregano
1 serving Ground Cumin Spice

Recipe Directions for Black Bean-Zucchini Tortilla Casserole

  1. * 1 1/2 tablespoons extra-virgin olive oil

  2. * 1 cup chopped onion

  3. * 1 medium green bell pepper, diced

  4. * 28-ounce can crushed or pureed tomatoes

  5. * 1 small fresh hot chile pepper, seeded and minced,

  6. or one 4-ounce can chopped mild green chiles

  7. * 2 teaspoons chili powder, or more, to taste

  8. * 1 teaspoon dried oregano

  9. * 1 teaspoon ground cumin

  10. * 16- to 20-ounce can black beans, drained and rinsed

  11. * 1 medium zucchini, quartered lengthwise and thinly sliced

  12. * 12 corn tortillas, torn or cut into several pieces

  13. * 8 ounces cheddar-style nondairy cheese (Daiya is great with this!)

  14. Preheat the oven to 400║ F (205║ C).

  15. Heat the oil in a large saucepan. SautÚ the onion until translucent. Add the green pepper and continue to sautÚ until it has softened and the onions are golden.

  16. Stir in the crushed tomatoes and seasonings, black beans, and zucchini. Bring to a simmer, then simmer gently for 5 minutes.

  17. Layer as follows in a lightly oiled 9-by 13-inch or 2-quart round casserole: Half of the tortillas, half of the tomato-black bean mixture, and half of the cheese. Repeat. Bake for 15 to 20 minutes, or until the cheese is bubbly. Let stand for 5 to 10 minutes, then cut into squares or wedges to serve.
