Black bean and zucchini quesadillas

Recipe Ingredients for Black bean and zucchini quesadillas

1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 serving Black Beans
1 tbsp Oil Olive Extra Virgin
1 tsp Cumin
2 oz Cabot 75% Light Vermont Cheddar
2 tortilla La Banderita Low Carb
2 tbsp sliced jalapenos

Recipe Directions for Black bean and zucchini quesadillas

saute zucchini, beans, oil and cumin for 5 minutes. Place zucchini mixture and cheese on each tortilla. Fold in half and put into pan until cheese melts and tortilla is toasted (about 3 minutes per side). Top with salsa.
