Recipe Ingredients for Black Bean & Zucchini Burrito

1 cup black beans (actually, 1 19 oz can, drained & rinsed)
5 1/2 oz tomato paste (1 can)
1 clove garlic, crushed
1/2 cup onion, diced
1 cup red bell pepper, diced
2 cup zucchini, grated
1 tsp olive oil
1 tsp cumin
1 tsp ground coriander
2 tsp chili powder
1/4 tsp cayenne pepper
1 tbsp brown sugar
1 tbsp apple cider vinegar
1 dash of salt
1 dash of pepper
2 tbsp cilantro, chopped

Recipe Directions for Black Bean & Zucchini Burrito

  1. Heat large skillet over medium heat and spray with cooking spray.

  2. Add olive oil, onion and garlic. Saute until onion is tender.

  3. Add diced peppers, zucchini, salt, pepper, cumin, coriander and cayenne pepper. Continue to saute until peppers have softened and zucchini has started to break down.

  4. Add black beans, tomato paste, brown sugar and apple cider vinegar. Cook until thorougly heated through (5 to 10 minutes).

  5. Remove from heat and stir in cilantro.

  6. Serve wrapped in tortillas with grated cheddar cheese (if desired).
