Recipe Ingredients for Black bean and veggies salad

2 cups black beans
1 medium carrot
1 stalk celery
1/2 medium red bell pepper
1 medium tomato
1/2 medium onion
2 tsp lemon juice
1 tsp olive oil

Recipe Directions for Black bean and veggies salad

Peel and chop all vegetables. Sprinkle with any desired seasonings (basil, cracked peppercorns, sprinkle of Parmesan cheese, etc.), olive oil, and lemon juice. Rinse and drain beans, then toss together and refrigerate overnight.
