Vegetable soup w/black beans and corn and other veggies

Recipe Ingredients for Black Bean Veggie Soup

1 medium onion
4 stalk of celery
1 head of cabbage
10 medium carrots
2 zucchini
2 squash
1 red bell pepper
1 green bell pepper
28 oz crushed tomatoe
48 oz chicken stock
4 tbs vegetable oil
1 can corn
15 oz black beans
15 oz rotel

Recipe Directions for Black Bean Veggie Soup

  1. Dice the onion, celery, red and greed peppers and sautee them in oil and then add the chopped cabbage and cook down.

  2. Peel, cut carrots and cook them for 20min in the microwave in the container of chicken broth.

  3. Dice squash and zuccini and dump in crock pot with crushed tomatoes and rotel, add the carrots and all of the broth, add all veggies, rinsed black beans and corn and season to taste.
