Recipe Ingredients for Black Bean Veggie Quesadilla

1 whole wheat tortilla
1/3 cup cheddar cheese
1/3 cup black beans
1/4 cup onions
3 tbspn fat free sour cream

Recipe Directions for Black Bean Veggie Quesadilla

Saute onions. Once softened, add black beans. Start quesadilla open faced with 1/2 of the tortilla covered with cheese. Add the black bean and onion mix. Add salsa if desired. Close tortilla and allow cheese to finish melting. Remove and cut into sectinons adding sour cream or salsa if desired.
