Recipe Ingredients for Black Bean Vegetarian Chili

2 cloves garlic, minced
1 small onion, diced
2 cup,+cubes sweet potatoes
1/2 red bell pepper, chopped
15 oz Black Beans, Organic (cup) (cup)
15 oz Diced Tomatoes, No Salt Added
1/2 cup Organic Vegetable Broth
1 tbsp chili powder
1 tsp cumin
1/2 tsp cayenne
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper

Recipe Directions for Black Bean Vegetarian Chili

  1. Saute onions and garlic in olive oil for a min or so.

  2. Add sweet potatoes, carrots and bell pepper. Cook for about 5-6 minutes.

  3. Reduce heat to medium-low and add remaining ingredients. Stir to combine well.

  4. Simmer Partially covered, stirring occasionally for 20-25 minutes or until flavors have mingles and veggies are cooked all the way through.
